THIS IS MY LUNCH THIS WEEK AND IS SO GOOD!
This recipe right here is so delicious, filling, and satisfying! I get full and I stay full with it!

Only 8 SIMPLE ingredients:
Chicken - I cooked a whole package of chicken in fajita seasoning within our pressure cooker - not only SUPER soft, but jam packed with FLAVOR! Then I shredded it and portioned it out to give me 6 servings for the week. So about 3/4 cup per serving is what I did but you do you!
Black Beans - 1/2 cup each lunch - I drained and rinse each can to get that syrup stuff off there.
Spring Mix - You can do spinach but I mixed it up with Spring Mix - eye ball method - handful of it!
Bell Peppers - I cut up an entire RED and ORANGE pepper and put it in there!
Cauliflower Rice - The base of this meal is an entire bag of cauliflower rice YES the 10 oz. Green Giant steamer bag from Wal-Mart! #veggiesmost
Avocado - I buy 3 per week and use 1/2 of the avocado for ONE lunch so 3 avocados will last me 6 days - Get those healthy fats in there to help with hair and skin!
Salsa - I used an organic one from Wal-Mart. I just poured it in but you can do whatever you want here.
Chipotle Sauce - I like some KICK and FLAVOR for my meals so I just bought one off the shelf - BUT I do have a recipe for it if you would like to make your own!
This lunch has been a staple this week for me and I am LOVING it. I look forward to eating lunch and I always feel great the rest of the day! I am following a nutrition program that allows VOLUME EATING in the RIGHT WAY and you can see what makes up MOST of this meal! As of today I am down 5.2 lbs. this WEEK just by switching up my nutrition and following her plate it methods and drinking more water! This lady knows her stuff!
